New study reveals peanuts as unexpected breeding ground for dangerous fungus.
Peanuts stored in low moisture and high CO2 conditions can still develop a white powder from a fungus called Xerochrysium xerophilum. This fungus, previously only found in dry prunes, chocolate, and dry coconut, can now also grow on peanuts. Scientists sequenced its genome and found a new way to identify it on contaminated peanuts without needing to extract DNA. This discovery will impact how peanuts are safely stored due to the fungus's ability to grow in a wide range of conditions.
