Rosaceae fruit trees share common enzyme, unlocking new agricultural possibilities.
A study compared polyphenol oxidase (PPO) in different fruit trees like apples, pears, peaches, quinces, and loquats. The researchers found that antibodies against apple PPO also reacted with PPOs from these other fruits. They analyzed the genes of these PPOs and discovered they were very similar, with protein sequences showing 85.3% to 97.5% identity. The PPOs had higher activity levels when tested at pH 4 compared to pH 6, indicating they work better in slightly acidic conditions. This suggests that PPOs in Rosaceae plants share similar structures and functions.
