New strawberry study reveals potential health benefits of anthocyanin pigments!
The researchers analyzed the anthocyanin pigments in strawberries from five different types. They found 25 different pigments, mostly containing Pelargonidin as the main component. Some also had cyanidin derivatives. The sugars glucose and rutinose were common, with some minor pigments having arabinose and rhamnose. They also discovered new pigments derived from anthocyanins. The total anthocyanin content varied between 200 and 600 mg per kg, with Pelargonidin 3-glucoside being the most abundant. The levels of anthocyanins varied within the same type of strawberries, depending on factors like maturity and storage conditions.
