Selenium-fortified wheat boosts nutrition in Mediterranean bread, improving health worldwide.
Selenium was added to wheat crops in Spain to see if it could increase the amount of selenium in the grain. Two types of selenium were used, and the results showed that one type was more effective. Even a small amount of selenium added to the crops could increase the selenium in the grain to recommended levels. The yield of the wheat was not affected by adding selenium, but the protein and gluten content of the grain were slightly reduced in a dry year. Overall, adding selenium to wheat in Mediterranean conditions could be a good way to make the grain more nutritious.
