New Indian Mustard Oil More Stable Than Canola Oil for Cooking!
Canola-quality Indian mustard oil is more stable to oxidation than conventional canola oil. Researchers compared oils from different breeding lines of each species and found that Indian mustard oil is more resistant to developing rancidity. Despite having slightly higher linolenic acid levels, Indian mustard oil showed better oxidative stability compared to canola oil. This suggests that Indian mustard oil could be used as a replacement for canola oil without concerns about stability.
