Cultured sweet smelt have healthier fats than wild counterparts in Korea.
The study compared the fat and fatty acid compositions of wild and farmed sweet smelt fish in Korea. Farmed fish had more fat in their muscles and eggs compared to wild fish. The types of fat in the fish muscles were mainly triglycerides and free sterols, while fish eggs also had sterol esters. Farmed fish had higher levels of certain fats in their muscles, depending on their diet. The fatty acid compositions differed between wild and farmed fish, with wild fish having more omega-3 fatty acids. Overall, the study showed differences in fat and fatty acid content between wild and farmed sweet smelt fish in Korea.
