Refined bread preferred over whole wheat, impacting consumer choices.
The study aimed to see if people prefer refined bread over whole wheat bread. They had 89 participants taste 9 different breads and rate them. The results showed that most people liked refined bread more than whole wheat bread when they were made the same way. However, when commercial samples were tested, people liked both types equally. Those who preferred refined bread consistently liked it more in all comparisons. People who couldn't taste a bitter chemical also liked both types equally. This suggests that changing ingredients or how bread is made can make whole wheat bread just as liked as refined bread.
