New Rice Varieties Packed with Resistant Starch for Improved Health
The resistant starch granules RS2 in Basmati 370 and Koshihikari rice varieties mainly consist of amylose, including linear and branched chains. Analysis using Size Exclusion Chromatography revealed that the amylose also contained long chains of amylopectin. Both rice varieties had over 26% of long chains (Degree of polymerization 36) in their RS2 branched chains.
