New method detects harmful compounds in sesame oil, ensuring consumer safety.
A method using high performance liquid chromatography was developed to measure sesamolin, sesamin, and sesamol in sesame oil. The compounds were separated and detected at specific times using a column and UV detector. Results showed that sesame oil contains 0.42% sesamolin and 0.54% sesamin, with no detectable sesamol. The method had high recovery rates for all three compounds.
