Fructose is the main sugar in the fruit, while malic acid is the main acid. As the fruit develops, the levels of fructose and sugars increase, with fructose increasing quickly in the middle stage. The sugar acid ratio and fruit flavor are mainly influenced by the levels of fructose and malic acid.
