Variety and environment significantly impact wheat grain quality.
A study looked at how different types of wheat and growing conditions affect the quality of wheat grain. They tested 10 varieties of winter wheat in 9 locations in Shandong Province. The results showed that both the type of wheat and the environment have a big impact on the quality of the grain. The differences in environmental conditions had the most influence on the protein and gluten content of the grain. The way the wheat behaved when made into dough was mostly affected by how the variety of wheat interacted with the environment. The starch content and texture of the grain were more affected by the combination of wheat variety and environment than by either one alone.
