The study looked at how adding different amounts of nitrogen to wheat fields affects the protein and starch in wheat grains. They tested different types of wheat and found that adding more nitrogen increased the protein content in the grains. Strong gluten wheat had the biggest increase in protein compared to middle and weak gluten wheat. The ratio of glutenin to gliadin also improved with more nitrogen.
