New soybean varieties in Hebei province offer healthier fatty acid options!
The study analyzed the fatty acid composition of 41 soybean varieties in Hebei province. Results showed that linoleic acid was the most abundant, followed by oleic acid, hexadecylic acid, linolenic acid, and stearic acid. Variety 'Kaiyu 9' had the highest linoleic acid content, while 'Jichengdou 3' had the highest linolenic acid content. The levels of fatty acids varied significantly among the different varieties, with oleic acid showing the largest variation. Linoleic acid was positively correlated with linolenic acid, and both were negatively correlated with oleic acid.
