Revolutionary Peanut Seed Development Boosts Healthy Fatty Acid Content
The study looked at how different fatty acids change in peanut seeds as they grow. They found that there are eight types of fatty acids in the seeds, with oleic and linoleic acids being the most common. As the seeds develop, the amount of oleic acid goes up while the other fatty acids decrease. By the time the seeds are fully grown, oleic and linoleic acids make up more than 80% of all the fatty acids. The total amount of fatty acids in the seeds goes up quickly at first, then slows down, and finally increases rapidly again as the seeds mature. The ratio of oleic to linoleic acid also changes during seed development, reaching its highest point in mature seeds.
