Freshwater Fish Spawn Offer Untapped Nutritional Goldmine for Millions
The study analyzed the lipid and fatty acid composition of carp and crucian carp spawn. Both types of spawn had similar lipid profiles, with triacylglycerols and phospholipids being the main components. The fatty acids found in the spawn ranged from C14 to C22, with popular ones being 16:0 and 18:1. Crucian carp spawn had higher lipid and phospholipid content compared to carp spawn. However, carp spawn had a higher ratio of n-3 to n-6 fatty acids. Overall, the lipid and fatty acid characteristics of the spawn are similar to those found in other freshwater fish tissues, suggesting potential for future use.
