New method simplifies testing amylose content in rice grains.
The researchers compared two methods for measuring amylose in rice grains. The modified method can analyze both milled and brown rice, with smaller differences in results. The order of amylose content in samples was milled rice grain, milled rice powder, brown rice grain, and brown rice powder. For milled rice, use KOH, and for brown rice, use NaOH. A sampling weight of 100 mg is ideal, but less can also be used for comparing amylose content.
