The study analyzed the storage proteins in three different types of wheat from Sichuan, China. They found that the quality of wheat is not only determined by certain proteins, but also by others. Having good subunits doesn't always mean good bread quality. The proteins studied are inherited equally from both parent plants. The quality of the wheat is not affected by the maturity of the seeds or how much light they receive during germination.
