New study reveals Qihe crucian carp muscle is a superfood powerhouse!
The researchers studied the flesh content and nutrition of allogynogenetic Qihe crucian carp. They found that the flesh content was 67.06%, with muscle containing 79.49% moisture, 18.08% protein, 0.95% fat, 1.16% ash, and 0.42% nonnitrogen extract. The muscle also contained 18 common amino acids, including 8 essential amino acids for humans. The total amino acid content was 17.89%, with essential amino acids making up 7.10%. The muscle had 39.57% tasty amino acids and the first limited amino acids were cystine and methionine. The essential amino acids index was 85.20. Additionally, the unsaturated fatty acids in the muscle were significantly higher than saturated fatty acids, at 64.79% and 35.21% respectively.
