Selenium-enriched legumes offer safe and nutritious food source for all.
Researchers investigated growing mungbeans and soybeans in Selenium solutions to create Selenium-enriched legumina. High Selenium levels can be toxic, with SeⅣ being more toxic than SeⅥ. Lower SeⅥ concentrations led to better growth. Using HG-AFS, they found that legumina grown in high Selenium had 75.0273-102.2612 μg·L-1. Lower SeⅥ levels resulted in 7.5002-69.8483 μg·L-1 for mungbeans and 11.1737-58.3926 μg·L-1 for soybeans, meeting Selenium food standards.
