Blueberry study reveals key stages for optimal sugar and acid levels.
The study looked at the sugar and acid content in blueberries at different stages of fruit development. They found that glucose and fructose levels increased as the fruit matured, while sucrose and sorbitol levels decreased. Citric acid was the main acid in mature fruit, decreasing as the fruit ripened. Quinic acid was the main acid in certain blueberry types, decreasing as well. Sorbitol was the main sugar in blueberry leaves, peaking around 15 days before harvest. The findings provide insights into the sugar and acid composition of blueberries during growth.
