Researchers investigated how to break down a compound called glucosinolate found in broccolini seeds. They tested different factors like time, temperature, and pH to find the best conditions to break down glucosinolate and identified the products using a special technique. They discovered that the best conditions for breaking down glucosinolate were 8 hours at 25℃ and pH 7. In their analysis, five specific compounds made up 80% of the products when glucosinolate was broken down.
