The researchers studied sugar and acid content in different types of peaches and nectarines. They found that nectarines had higher levels of certain sugars compared to peaches. The color of the fruit flesh did not affect the sugar and acid content. Some sugars and acids were more common in late-maturing fruits. Overall, sucrose, total sugar, and total acid content changed as the fruits developed from blooming to maturity.
