Peanut seeds show potential for healthier fatty acid content near maturity.
The study looked at how fatty acids change in peanut seeds as they grow. Small seeds far from the plant grew bigger than large seeds near the plant. As the seeds matured, the small ones became heavier than the big ones. Peanut seeds contain twelve different fatty acids, with oleic acid and linoleic acid being the most common. The total amount of fatty acids and oleic acid increased as the seeds developed, while linoleic acid decreased. Near maturity, oleic acid and linoleic acid made up almost 80% of the fatty acids.
