Greenhouse-grown peaches have higher vitamin C and sugar content.
The study looked at how the sugar, acid, and vitamin C levels in greenhouse-grown peaches change as they ripen. The total sugar content increased as the fruit matured, but different types of sugar changed in different ways. Acid levels were highest in young fruit and decreased as they ripened. Vitamin C levels followed a V-shape curve, being highest in young and ripe fruit and lower in between.
