Strawberries harvested in February have highest sugar content, study finds.
The sugar content of strawberries varies depending on the month they are harvested. Strawberries picked in February had the highest sugar levels, especially sucrose. Enzyme activities related to sucrose metabolism were also different between months, with strawberries harvested in February showing higher levels of enzymes favoring sucrose accumulation. Even though strawberries picked in April had similar enzyme activities to those in February, they did not accumulate as much sucrose. This suggests that the lack of sucrose accumulation in April-harvested strawberries is not due to sucrose metabolism.
