New wheat cultivars in Guizhou province promise higher quality bread.
The study analyzed the gluten proteins in 50 wheat cultivars from Guizhou province. They found different combinations of these proteins, with some cultivars having higher quality scores than others. Cultivars bred in Guizhou had lower quality scores compared to those from other parts of China. Some cultivars had specific high-quality gluten protein patterns, which could be useful for breeding better wheat varieties. The study also discussed strategies for improving wheat quality in Guizhou.
