New Study Reveals Muscle Composition of Rare Amphibian Species.
The researchers analyzed the muscle composition of a species called Hynobius yunanicus. They found that the muscle is mostly made up of water, protein, and small amounts of fat and sugar. The amino acid content in the muscle is suitable for human nutrition, with some amino acids being particularly beneficial. Valine was identified as the most limited amino acid. The muscle also contains more unsaturated fatty acids than saturated fatty acids.
