Rapeseed Meal Transformed into Nutritious Peptides, Boosting Food Security
In this study, researchers wanted to make peptides from rapeseed meal. They used two types of protease enzymes to break down the meal. After testing different conditions, they found that using a specific combination of enzymes and conditions led to the highest peptide yield - about 54.89%. The best setup included using 4500 U/g of enzymes, a temperature of 50°C, a pH of 8.0, a material-to-water ratio of 1:8, and mixing alkaline and neutral proteases at a ratio of 3:1. The hydrolysis process took about 6.5 hours. Ultimately, this method proved effective in producing peptides from rapeseed meal.
