They found that mature bananas contain mainly sucrose, glucose, and fructose, with sucrose being the most abundant. Gongjiao bananas had the highest sugar content, while Fenjiao bananas had the least. The major organic acids in all three types were malic acid-based, with Fenjiao bananas having the highest acid content. This information can help in evaluating the quality of banana fruit.
