Chloroplasts in eggplant leaves change as they get older. Young leaves have long, tube-shaped structures inside chloroplasts, while old leaves have round structures. The green parts in chloroplasts are weaker in old leaves, and there are fewer starch grains. Small blobs in chloroplasts get bigger and more numerous in old leaves. Also, a substance called phenolic accumulates in old leaves.
