Cottonseed Protein Hydrolysis Unlocks Powerful Peptides for Improved Nutrition
In a study on cottonseed protein, scientists aimed to make active peptides by breaking down the protein using an enzyme called neutrase. They tested how factors like temperature, pH level, enzyme amount, and time affected this breakdown. By doing 17 experiments with different temperatures, pH levels, and times, they found the best conditions for getting the most breakdown of the protein. The perfect mix was a temperature of 39.5 degrees Celsius, a pH of 7.5, and a time of 5.5 hours with 6000 units of enzyme. In these conditions, they reached a breakdown of 38.09% of the cottonseed protein.
