The researchers identified 26 key odorants in Chinese Zhima aroma-type Baijiu, a popular drink in northern China known for its sesame aroma. These key compounds, like ethyl hexanoate and 3-methylbutanal, were found to be crucial for the unique aroma of the Baijiu. By mixing these key odorants in specific concentrations, they were able to recreate the overall aroma of the Baijiu. Omission experiments confirmed the importance of methional and ethyl hexanoate in creating the distinct aroma of Chinese Zhima aroma-type Baijiu.
