Researchers developed a method to measure nitrate and nitrite in meat products. They used a process involving metallic cadmium to determine the levels of these compounds. The method successfully recovered 93-95% of nitrate and nitrite added to meat, without interference between the two. The tests showed that the method is reliable and should be further investigated.
