Shortwave infrared radiation can bake bread faster and more efficiently than conventional methods. By adjusting power levels in an infrared oven, researchers achieved a desirable crust color and baked crumb in just 6 minutes, compared to 17 minutes in a conventional oven at 230°C. The precise control of parameters in the infrared oven allowed for optimal crust thickness and evenly baked crumb.
