Sprout enrichment methods impact microbiome, hindering detection of foodborne pathogens.
Fresh mungo bean sprouts can carry harmful bacteria like Salmonella and E. coli, but the many harmless bacteria on the sprouts make it hard to detect these pathogens. Scientists studied the bacteria on mungo bean sprouts and how two different methods for detecting harmful bacteria affected the sprout microbiome. They found that one method increased the levels of certain bacteria that could inhibit the detection of harmful pathogens, while the other method preserved the dominance of bacteria that could make it harder to find the harmful ones. This research gives us new insights into how different detection methods can impact the bacteria on mungo bean sprouts and affect our ability to find dangerous pathogens.
