High-amylose rice slows digestion, potentially aiding in weight management.
The structure of Hybrid Indica Rice starch affects how it is digested. Starches with more amylose take longer to digest. The size of amylose and amylopectin was measured using special techniques. Results showed that starch with higher amylose content digests slower. The length of amylopectin chains didn't affect digestion rate. Amylose controlled by a specific enzyme plays a key role in starch digestion.
