Peaches with Flesh Pithiness Linked to Climate and Cell Size
The study looked at why some `Yumyeong' peaches get mushy inside when harvested late. They found that late-harvested fruits had more mushiness. The mushy parts had fewer calcium and citric acid, and smaller cells. The mushiness was linked to high temperatures and low rain before harvest. The mushy parts had tylosises that hindered normal growth. Other peach varieties also showed similar issues.
