Small wheat flour samples accurately measure water absorption with mixograph test.
Water absorption in wheat flour can be accurately measured using a mixograph with just 10g of flour, instead of the usual 300g needed for a farinograph test. The results from the mixograph were very similar to those from the farinograph, showing that this smaller-scale method is just as effective for determining water absorption in flour.
