The goal of the research was to check the levels of nitrite and nitrate in vegetables in Medan City. The researchers used a method to measure nitrite levels and another method to measure nitrate levels after reducing them. They found that spinach had the highest nitrite levels and kale had the lowest nitrate levels. Overall, the vegetables had higher nitrate levels than nitrite levels.
