Sesame seeds and oils show wide variation in cancer-fighting lignans!
Researchers analyzed sesame seeds and oils to measure the amount of three lignans using a special method. They found that black sesame seeds contain more sesamin and sesamolin compared to other varieties. Black sesame oils also have higher lignan levels than white sesame oils. Oils made through hot pressing and small mills have more lignans than cold pressed and refined oils. The study shows that there is a wide range of lignan concentrations in sesame seeds and oils.
