Mushroom-enriched bread boosts health but may shrink your loaf!
Edible mushrooms are packed with healthy compounds that can benefit our bodies. Scientists wanted to see how adding powdered Auricularia auricula mushroom to bread would affect its quality. They found that adding up to 5% of the mushroom flour improved the dough's texture and water-holding ability. However, using more than 5% of the mushroom flour made the bread less fluffy, shorter, tougher, and less appealing. So, while a little mushroom in your bread can be good, too much might not be so tasty.
