Fish Fat Study Reveals Healthiest Options for Heart and Brain
The fatty acid profiles of grass carp, bighead carp, Siberian sturgeon, and wels catfish were compared to see which fish provide the most health benefits to consumers. The fat of these fish contained different amounts of saturated, monounsaturated, and polyunsaturated fatty acids. Bighead carp and Siberian sturgeon had the highest levels of beneficial omega-3 fatty acids, specifically EPA and DHA, which are good for heart health. The ratios of omega-6 to omega-3 fatty acids and polyunsaturated to saturated fatty acids in the fish fat were found to be favorable for human health.
