The researchers wanted to see how adding walnut flour to wheat bread affects its physical and taste qualities. They made walnut flour by drying and grinding walnuts, then mixed it with wheat flour in different amounts. The bread with 20-50% walnut flour had more protein and healthy fats but less carbs and fiber. However, the more walnut flour they added, the smaller the bread loaves became. People could tell the difference in taste between regular bread and the walnut-enhanced bread. Overall, using 30% walnut flour made the best-tasting bread.
