Age, not climate, determines quality of Black Bengal goat meat
The study looked at how the age of Black Bengal goats and different agro-climatic zones in West Bengal affect the quality of their meat. They tested the moisture, protein, ash content, pH levels, cholesterol, water holding capacity, and muscle fiber diameter of the meat. The results showed that the age of the goats had an impact on the meat quality, with differences in protein content and ash levels among the age groups. However, the agro-climatic zones did not seem to affect the composition or quality of the goat meat.
