New Enzymatic Process Boosts Glucose Syrup Production Efficiency by 22%!
The researchers optimized the production of glucose syrup from sabrang potato starch using enzymatic hydrolysis. They studied the effects of saccharification time and glucoamylase concentration, finding the optimal conditions to be 27 hours 49 minutes of saccharification time and 4.96 mg/ml of glucoamylase concentration. At these conditions, they achieved a maximum production of glucose syrup with 22.69% glucose levels, 89.11% dextrose equivalent, and 75.63% glucose yield.
