Rice protein discovery could boost global food security and nutrition!
The study compared how much of two major proteins, glutelin and prolamin, are in rice grains. Glutelin content is much higher than prolamin in rice. The researchers found that glutelin weight per grain is 3.24–3.95 times higher than prolamin weight. Glutelin accumulates faster and for a longer time than prolamin, which explains why it ends up being heavier in rice grains.
