Sweet potato flour cannot fully replace wheat flour in dough making.
The study tested using sweet potato flour instead of wheat flour in dough. They tried different percentages of sweet potato flour with two types of wheat flour. The results showed that dough made with 60% sweet potato flour and hard wheat, or 40% sweet potato flour and medium wheat, didn't work well. The dough's viscoelasticity couldn't be measured when using 40% or more sweet potato flour with hard or medium wheat.
