Washing Vegetables Reduces Health Risks from Heavy Metals in Shanghai.
The study looked at heavy metal levels in vegetables near industrial areas in Shanghai. Washing vegetables before cooking reduced the health risk from heavy metals. Amaranth had the highest levels of Cd, Zn, Pb, and Cu, while pakchoi had the highest levels of Hg and As. Arsenic (As) posed the highest health risk, with children being more at risk than adults when eating these vegetables.
