The researchers studied how adding walnut oil and walnut oilcake to wheat bread affects its properties. They found that using these walnut-based additives changed the bread's texture and antioxidant levels. Bread with walnut oilcake had higher dough and bread yields, while bread with walnut oil had the largest volume. Adding walnut-based ingredients increased the bread's antioxidant potential. The bread with walnut oilcake had the most phenolic acids, with ferulic acid being the most dominant. This research shows that adding walnut oil and walnut oilcake to bread can make it healthier and more nutritious.
