The researchers studied how to extract soybean protein for tube feeding formulas. They tested different enzymes and found that Flavourzyme worked best. By combining thermal treatment with enzymatic hydrolysis, they increased the protein yield. Flavourzyme produced larger protein molecules compared to Alcalase. The soy protein extract was suitable for patients recovering from surgery and could flow easily through feeding tubes.
